As I navigate my kayak through the headwaters of the Florida Everglades, the only sounds are the chirping of birds and the soft splash of my paddle as it dips into the creek. In the distance, a limpkin steps gingerly through the wetlands, poking its long beak into the caramel-colored water in search of edible morsels hiding below the surface.
One might guess that I’m in the Everglades national park, but I’m actually much further north, in the Central Florida town of Kissimmee.
